Instant Pot Turkey Tomato Florentine Soup – THM E
Tomato Florentine Soup is one of my favorites, but many recipes have a thickener added which adds unhealthy starches. This is a quick, easy and filling soup version in less than 30 minutes and cooking it in the Instant Pot gives it a full bodied tomato flavor. It’s also very budget friendly!
Instant Pot Powerhouse Meatloaf – THM S
It’s Powerhouse Meatloaf because it has an added boost of Omega 3 by using ground flax meal. The flax meal replaces the need for a bread crumbs or other fillers. It’s a great recipe for the Instant Pot and can be made ahead and easily reheated.
Instant Pot Pumpkin Cheesecake with Spiced Pepitas
What’s fall without pumpkins? Another great recipe from my dessert adventures while working at Millard’s at the Summit. This is by far the creamiest cheesecake I have made in my Instant Pot. The pumpkin flavor is spot on with just the right amount of spice and pairs perfectly with homemade whipped cream. The roasted sugar and spice pepitas are fun to make while adding a bit of crunch! Pepitas make a great S snack for a lunch box or use them as a salad topper for a bit of sweet and crunch.
Instant Pot Layered Pumpkin Cheesecake
Another great recipe converted to fit THM and the Instant Pot from my dessert crew days at Millard’s at the Summit restaurant. This is actually a fun and simple twist on the Simple Instant Pot Cheesecake. It’s just the right amount of pumpkin flavor without over powering the cheesecake. The crust has a hint of gingerbread flavoring with some tasty Sugared Pepitas added to the crust.
Instant Pot Pumpkin Spice Bundt Cake
Pumpkin Spice Bundt Cake is moist and satisfying topped with a cream cheese icing drizzle. Cooking this cake in the Instant Pot creates a moist dense cake that is husband approved. Slices of this bundt cake freeze very well for lunch box treats or that quick S snack in mid afternoon with a Vanilla Rooibos Tea Trimmy found on page 433 of the Trim Healthy Mama cookbook. Roasted Sugar and Spice Pepitas
Another great recipe for Pepitas! Pumpkin seeds—also known as pepitas—are flat, dark green seeds. Some are encased in a yellow-white husk (often called the “shell”), although some varieties of pumpkins produce seeds without shells. Pumpkin seeds have a malleable, chewy texture and a subtly sweet, nutty flavor.
Sugared Pepitas a Healthy Snack
One of our favorite snack are organic Pepitas aka pumpkin kernels. Plus they are very good for you since they are high in manganese, zinc and protein!
Instant Pot Meatloaf – THM E or FP
This recipe was given to me by my dear friend and coworker, Karen B. It’s our favorite meatloaf and helps to keep our trim going. The horseradish gives it a bit of zing without over doing it. It’s a quick and easy meat dish for your Instant Pot using a 6 cup Bundt pan or a glass tube pan.
Heirloom Cherry Tomato Corn Salad – THM E
Fresh finds at the farmer’s market always include beautiful heirloom tomatoes, cucumbers and fresh sweet corn. Heirloom tomatoes are Non-GMO and are usually organically grown. They are very flavorful and the colors are so much fun! We love this salad with grilled turkey sausage burgers or grilled salmon and a small serving of herb flavored brown rice or quinoa.
Sweet Corn in the Instant Pot – THM E
Corn on the cob is one of the best flavors of summer. I love cooking sweet corn on the cob in my Instant Pot. It’s so quick and easy. It takes longer to husk, wash and clean the corn than it does to cook it! We enjoy an ear of corn with grilled chicken breasts and a nice side salad of leafy greens, cucumbers, radishes, bell peppers and cherry tomatoes.
