Apple Pie Oats

Instant Pot Apple Pie Steel Cut Oats

There’s nothing like the smell of a freshly baked apple pie! This is a healthier version not to mention they are fun and so easy to make in the Instant Pot. There are no special ingredients needed unless you would like to add THM Collagen to boost the protein.  Apple Pie Ala Mode, yes indeed these smell and taste just like Apple Pie Ala-mode.

I used the Ball Collection Elite Wide Mouth 16 ounce pint canning jars to make three to four servings at once. Three fit perfectly in the DUO 60, 6 Quart Instant Pot.  Four fit snugly in the DUO80, 8 quart Instant Pot. The recipe ingredients are listed for filling one jar. Just repeat for remaining jars.

We prefer the steel cut oats in this recipe but rolled oats will work. The cooking time remains the same for both. The steel cut oats will be firmer with a nice chew.

I do love to use freshly grated nutmeg. It really brings out the flavor and only takes an extra second to give your dish a boost. I buy whole organic nutmeg and grate it with either a multi-purpose fine microplane or a small nutmeg grater. The Norpro 335 Nutmeg Grater even has a lid giving you a handy place to store your nutmeg until the next time you need it.

Ingredients – Single Serving

1/4 cup steel cut oats or old fashioned rolled oats
1/3 cup unsweetened, unflavored almond milk
1 Tablespoon THM Integral Collagen (optional)
A pinch of THM Himalayan High Mineral Salt
1/3 cup 0% Greek yogurt
1/2 cup of chopped apple with skin
3 raisins, chopped
1 teaspoon low carb Brown Sugar
1/8 teaspoon pure vanilla extract
1/32 teaspoon ground cinnamon (that’s a THM Doonk)
A few grates of freshly grated whole nutmeg

Instructions

  1. Start with clean jars and lids. Add 1 1/2 cups of water to your Instant Pot liner and insert the trivet/rack.
  2. In each jar add your oats, pinch of mineral salt then your almond milk. If using THM Collagen whisk vigorously with a fork. Don’t worry if you have small clumps.
  3. Next add your Greek yogurt and spread out gently.
  4. Top with the 1/2 cup chopped apple, chopped raisins, low carb brown sugar, vanilla extract, cinnamon and nutmeg.
  5. Place lid and jar ring on the jar – loosely tighten ring, it should wiggle.
  6. Place completed oat mixture in the Instant Pot. Lock lid, set to sealing. Hit the Rice button which is an automatic programmed time of 12 minutes high pressure. NPR 2 minutes, then release the pressure.
  7. Carefully remove the jars with a silicone pot holder or canning jar lift. Wipe the hot water of the jar and carefully remove the ring and lid. Stir and serve.

    would you say these are “pressure canned” and shelf stable? or we need still need to eat them right away?

      These are not pressure canned; they are only cooked and they are meant to be eaten right away.

    How long to cook two jars?

      Hi Andrea!
      I have cooked 3 jars at one time and the timing stays the same as for one jar.

    How long would the stay in the refrigerator after cooking?

      We eat this hot/warm so I have not stored it in the frig after cooking. The rule of thumb for most things that are cooked are 2 to 3 days.
