Apple Oatmeal Coffee Cake is a quick, moist and tasty snack or dessert that will please the entire family. This recipe was one of my best-selling mixes when I was creating family favorites to sell as a packaged mixes at fall holiday craft fairs and markets. Since apples are available pretty much year-round we have this cake quite often. It’s an E snack or dessert for the Trim Healthy Mama Plan.
Instant Pot Chicken Tender Stew is a favorite at our house. It’s so quick and easy to prepare. Actually it takes longer to prep the veggies then it does to cook! It’s a warm and comforting Trim Healthy Mama E meal too!
Meatball Minestrone Soup is one of our favorites when fall starts to peek its head around the corner. This minestrone soup is one of our favorites and has a great flavor. I will often use tomatoes from the garden in September for an even fresher flavor. What? Wait! Meatball Minestrone Soup is a THM E you ask. Yes, but the key is using fat free beef broth and 97% lean ground beef. It’s a hearty soup and will easily serve 6-8 people. It also freezes well.
Instant Pot Turkey Tomato Florentine Soup was created because Tomato Florentine soups is one of my favorites, but many recipes have a thickener added which adds unhealthy starches. Turkey Tomato Florentine Soup is a quick, easy and filling soup version in less than 30 minutes and cooking it in the Instant Pot gives it a full bodied tomato flavor. It’s also very budget friendly!
It’s Powerhouse Meatloaf because it has an added boost of Omega 3 by using ground flax meal. The flax meal replaces the need for a bread crumbs or other fillers. It’s a great recipe for the Instant Pot and can be made ahead and easily reheated.
Instant Pot Pumpkin Cheesecake with Spiced Pepitas
Instant Pot Pumpkin Cheesecake is another great recipe from my dessert adventures while working at Millard’s at the Summit. What’s fall without pumpkins? This is by far the creamiest cheesecake I have made in my Instant Pot. The pumpkin flavor is spot on with just the right amount of spice and pairs perfectly with homemade whipped cream. The roasted sugar and spice pepitas are fun to make while adding a bit of crunch! Pepitas make a great S snack for a lunch box or use them as a salad topper for a bit of sweet and crunch.
Layered Pumpkin Cheesecake is another great recipe converted to fit THM and the Instant Pot from my dessert crew days at Millard’s at the Summit restaurant. This is actually a fun and simple twist on the Simple Instant Pot Cheesecake. It’s just the right amount of pumpkin flavor without over powering the cheesecake. The crust has a hint of gingerbread flavoring with some tasty Sugared Pepitas added to the crust.
Pumpkin Spice Bundt Cake is moist and satisfying topped with a cream cheese icing drizzle. Cooking this cake in the Instant Pot creates a moist dense cake that is husband approved. Slices of this bundt cake freeze very well for lunch box treats or that quick S snack in mid afternoon with a Vanilla Rooibos Tea Trimmy found on page 433 of the Trim Healthy Mama cookbook. You will find the recipe for the pepitas here: Sugared Pepitas. Be sure to make extra pepitas because they are a great snack!
Another great recipe for Pepitas! Pumpkin seeds—also known as pepitas—are flat, dark green seeds. Some are encased in a yellow-white husk (often called the “shell”), although some varieties of pumpkins produce seeds without shells. Pumpkin seeds have a malleable, chewy texture and a subtly sweet, nutty flavor.
