Place cashews and sunflower lecithin into the 64 ounce Vitamix container; add water.
Turn on blender, gradually turn blender speed up to variable speed ten. Blend for 50 to 60 seconds or until it reaches your desired consistency and nuts are liquefied.
Pour into a clean glass container, store in the refrigerator from 5 to 7 days. Shake very well before serving.
