Sweet Corn in the Instant Pot – THM E
Sweet Corn in the Instant Pot is one of the best flavors of summer. I love cooking sweet corn on the cob in my Instant Pot. It’s so quick and easy. It takes longer to husk, wash and clean the corn than it does to cook it! We enjoy an ear of corn with grilled chicken breasts and a nice side salad of leafy greens, cucumbers, radishes, bell peppers and cherry tomatoes.

Prep Ahead with Sweet Corn on the Cob!
Since the Instant Pot is so quick and retains the flavors of food it’s a perfect way to cook corn and freeze to use in meal prep planning. Once the pressure has been released in the pot dunk the ears in an ice bath to stop further cooking and cool the corn so it can be cut off the cob. I use a wide, 4 quart Pyrex bowl when cutting the corn off the cob which helps to keep the corn kernels in one spot. Plus it makes it easy to scoop up and measure for other recipes.

Tip: Cooking Water from Corn on the Cob
I measure the cooking water into 1/4 cup measurements. I pour the cooking water into small 4 ounce freezer safe jelly jars and add 3 tablespoons of corn kernels. I use this to replace the water in the recipe. The cooking water contains flavor and nutrients, without the calories.

- 6 ears sweet corn (husked and washed)
- Husk and wash corn, removing silk from the cobs using a Corn Brush and Vegetable Scrubber. Trim tops if needed to fit in the liner.
- Place 1 cup of water in the Instant Pot liner, add trivet, set in the Instant Pot.
