I usually spend Friday making on plan treats for both my husband and I. He’s on plan about 75% – and I love that he goes with the flow. So today I will be making gummies, blueberry yogurt pops and the brainy blueberry muffin. I’m going to do a freezer jam for hubby as well.
I got these organic blueberries at my local farmers market. The vendor is so nice to me – she tops off my buckets – there were more but I ate some with my supper.

Blueberry Greek Yogurt Popsicles are perfect for a summer day and so much better than ice cream! We keep these treats on hand all the time. One batch will make approximately 9 frozen treats which keeps this treat in the Fuel Pull range.
Blueberry Greek Yogurt Frozen Popsicles
Ingredients:
2 cups of Blueberries (or frozen at room temperature), divided
1 tablespoon + 1 teaspoon of THM Super Sweet or 3 tablespoons + 2 teaspoons of THM Gentle Sweet
1 tablespoon Lemon Juice
1 tablespoon Pure Vanilla
2 cups Plain Nonfat Greek Yogurt
Directions:
- Place the 1 cup of blueberries in your Vitamix wet container. Add either THM Super Sweet or THM Gentle Sweet, lemon juice and vanilla.
- Blend until your blueberries are nicely pureed.
- Pour into bowl; add remaining blueberries, stir.
- Stir in yogurt and mix until combined.
- Be sure to taste the mixture and adjust sweetness as needed.
- Spoon into popsicle type molds and freeze.
I love these Popsicle molds by Zoku. You can purchase them here at Zuko Molds on Amazon. They also have fun sizes and shapes for the kiddos – spacemen, fish and dinosaurs. This recipe does require 2 sets but if you can only afford one you can freeze the remainder in a dish as an ice cream – cover and freeze, stirring every 15 minutes until desired consistency is reached. Watch carefully so you do not over freeze it.
